Not a clue...just ran a ton of them and kept the pet happy. My best guess is that some pets (even of the same type) are just better in fights or races than others.
For example, I stated a bunch of ninja cats, feed them all the same thing at around the same time (same stats, same mood) and there are some that just consistently out perform the rest. One might be better at racing than fighting. Others excel at different levels of pet fighting. 1 could win almost every time in bunny league, but against the same competition (roughly) hardly win in the dragon league.

I've finally got Bestiality Enthusiast, still need 2 more race wins for the achievement, though. Battles... still a long way off...
